Il Palmento di Feudi is a place where quality ingredients and traditional Sicilian cooking meet innovation. A restaurant set in the distinctive vaulted space of the old tinaia of the Palmento, overlooking the remarkable barrel cellar, which can be seen through the glass floor. In the open kitchen, our chef prepares traditional Sicilian dishes, interpreted in a contemporary style, using the produce from land and sea that is so abundant and varied in Sicily, and of such excellent quality.

Fish is always a favourite in the kitchen of the Palmento di Feudi, together with vegetables and the typical dairy products of Sicily. The choice of ingredients from the local area guarantees quality and freshness for our guests and offers a superb culinary experience at the dining table. There are also cultural influences and inspiration from all over the world, thanks in part to the collaboration with the restaurant Le Cirque New York, which also offers assistance with the cooking classes. All this makes the wine resort’s restaurant a point of reference for Sicilian high cuisine in the Val di Noto.

Among the experiences that you can have at Feudi del Pisciotto, the Cookery School developed in collaboration with Le Cirque New York, a cult restaurant that American presidents and stars dine at, is certainly one of the most interesting and exclusive.

An absolutely unique experience, which makes our wine resort one of the best of its kind in Sicily. An experience dedicated to people from Italy and abroad. The courses last from 2-3 days to two weeks, and allow you to discover the thread that binds a temple of fine cuisine like Le Cirque New York with the varied culinary tradition of Sicily, with its legacy left by the Greeks, Arabs, Spanish and Normans.

The Feudi Wine Cellar’s

A key element of Feudi del Pisciotto is its wine cellar. In fact, the traditional restoration of the eighteenth century manor, which has become a luxury resort with a gourmet restaurant, left the old palmento intact, a place where grapes have been pressed for wine making since Greek and Roman Times. More recently, a modern wine cellar has been added to it.

In the same way, the range of wines known as wines of Feudi del Pisciotto  is the result of a mix of ancient and modern. Respect for the Sicilian wine making tradition is combined with innovative ideas like growing Pinot Nero or making a Passito dessert wine from Gewürztraminer and Sémillon instead of Zibibbo. It is innovation and research like this that allows our guests to take a sensory journey, and have a real Sicilian food and wine experience.
